9 Easy Steps to Blueberry Jam

How to make the perfect blueberry jam (makes four 8 ounce jam jars)

Summer is the season for making fruit jams
  1. Buy 2 1/2 pounds of blueberries.  I buy them from Spicknall’s Farm Market in Beltsville, MD. I can get 3 quarts for $10.00.
  2. Wash the berries and place in a large cooking pot.
  3.  Weigh sugar on a scale.  I aim for 11/2 pounds of sugar
  4.  Pour the sugar on top of the berries. Add a packet of Agar Agar (4 grams) + 1/2 packet
  5.  Turn on high heat and cook the berries.  They will start to break down and become soft and mushy as you continue to stir, and stir, and stir!  Do not stop stirring!
  6.  Look for the berries to start to get frothy. When they are frothy, turn down the heat to medium-low (still seeing and hearing the bubbles).  Grab a flat wide spoon and carefully and slowly, remove the froth and set aside in a bowl.
  7. Continue stirring and stirring until the berries start to thicken. It’ll take about 20-30 minutes so do not get distracted by anything else!
  8.  Turn off the heat, set the jam aside, and start the process of pouring in the jams to the jars using a metal wide mouth funnel.
  9. Turn the jam jars upside down until they are cooled!
